Conveniance foods

There is an increasing problem with cooking industry personnal (cooks) not standing up and having there own opinion. My example is, get a group of cooks together and ask them for an opinion on convienance foods. As soon as the first one says "in my litchen we make everything" generally the rest will just fall into line and repeat the comment. when you acually go into there kitchens it is a completely different story. You will find any amount of concienance products, cooks just do not want to admit they use them which i think is madness. If you look at the range of custom culnary stocks and sauces, you will find a surperior lne of products that most kitchens with skill shortages could not replicate due to time and actual cost. people do not be concerned with admitting you use convienance products, just use quality ones.
